Champagne Cocktails: Flamingo-tini

In honor of the pink flamingos that call the resort home, the Renaissance Aruba Resort & Casino has mixed up this pink flamingo-tini, flavored with raspberry and pineapple.

In a martini shaker, mix together the following ingredients:

  • 1½ oz. vodka
  • ½ oz. Triple Sec
  • ¾ oz. pineapple juice
  • splash of raspberry puree or syrup

Add ice and shake well. Strain into a martini glass and top with champagne.

The Air Mail cocktail is made with rum, lime and honey, and a splash a champagne adds a little sparkle.

In a martini shaker, mix together the following ingredients:

  • 1 oz. white rum
  • ½ oz fresh lime juice
  • ½ oz honey
  • a splash of champagne

Add ice and shake well. Strain into a champagne flute and serve.

Floral bitters add complexity and a splash of champagne adds sparkle to the Old Havana, a rum-based cocktail.

In a martini shaker, mix together the following ingredients:

  • 1 oz. light rum
  • 1 oz. champagne
  • ½ oz. lime juice
  • A few drops of floral bitters
  • A few mint leaves

Add ice and shake well. Strain into a tall glass and garnish with fresh mint leaves and a lemon.
