As travel booms, so should the desire to limit the ways tourists affect their destinations. At least that’s the belief fostered by the coalition known as Regenerative Travel, which was founded with the intention of uniting independent hotels that wish to make “positive and social impact” on their communities. Back when I was in the music industry, working festivals and performing as a DJ, travel became my passion. Visiting places like Playa del Carmen, Tulum, Miami, and various destinations in Latin America was exciting—and certainly helped me overcome my fear of airplanes—but it wasn’t until I started visiting the Caribbean islands that I truly fell in love.

One particular getaway to Aruba unlocked something in me—a desire to transform and be my best. With all that we have been through over the last year, I can’t wait to get back out there and return to so many of my favorite hotels and resorts that I have visited.

Silversands—Grenada

The 43 suites and hillside and beach villas at this beloved resort are enveloped in the marvelous smells of the bountiful frangipani flowers and the spices from which this island draws its nickname, “The Spice Island.” The 100-meter infinity pool holds the distinction of being the longest in the Caribbean, and it is ideal for early morning lounging or staring at the sunset’s reflection (Grenada’s sunsets are the closest thing to heaven).

More interesting and especially fascinating is how the hotel subtly integrates its spaces throughout the northern end of the Grand Anse area with local houses, all wrapped up in the rainforest. The result is a splendid atmosphere and a Caribbean getaway unlike most others.

As a tribute to the artist Paul Gauguin, the South Pacific influence of the hotel is evident, and well assumed. Every room sits right on the sand, providing the incomparable sounds and sensations of the waves washing the sand. To top it all off, the food is delicious and the crafted cocktails are addictive. That’s Galley Bay life.

Guana Island—British Virgin Islands

Round Hill Hotel and Villas—Montego Bay, Jamaica

When guests finally return to this beloved property, they’re in for a few new surprises. For starters, as part of the resort’s effort to play its role in eliminating the presence of Covid-19—which all of Saint Lucia has excelled at—Marigot Bay will introduce the Marigot Moment Maestros (or Triple M) services, which merge private butlers and dedicated concierge into one team member assigned to each guest group.

The experience begins with a personal meet-and-greet at Hewanorra International Airport, followed by private transfer service and check-in. Each Maestro will be available day and night for services big and small, including making dinner reservations, planning island excursions and organizing treatments at the Spa Village.

To assist with physical distancing, each penthouse features a private entrance and complete Italian Aster Cucina fitted kitchen with private dining room for guests who’d prefer to eat away from other guests (even as on-site restaurants operate under extensive precautions).

Maestros will pre-stock kitchens based on guest preferences, so visitors can cook their own meals at any time. However, who wouldn’t love to have the resort’s expert culinary team swing by and handle the hard part?

Finally, Marigot Bay Resort and Marina is also rolling out the “Six Star CARE Program,” which includes more than 100 preventative actions intended to keep guests and staff safe and healthy. The CASE (Clean and Sanitize Everything) program was also developed in conjunction with local and regional tourism agencies, and all guidelines recommended by the WHO and U.S. CDC will be followed.

With a set of strict rules and testing protocols in place, Saint Lucia reopened to international travelers on June 4, but the number of available beds remains limited as hotels work to achieve COVID-19 certification or simply open at their own pace. The good news for this island that reported 100 percent recovery in all 19 cases is that almost a month has passed and there are still no active cases. But that doesn’t mean Saint Lucians are out of the woods yet, and as such they will continue to limit the number of activities available to visitors, as well as large gatherings.

That includes the 13th annual Mango Madness Festival, which would have been hosted at the acclaimed Jade Mountain resort on July 8. Instead, travelers from all of the world seeking to enjoy, celebrate and even defend their favorite mangoes—julie is usually the crowd favorite but I’m a huge mallika aficionado—will have to settle for a different venue: their homes. Yes, the mango show will go on, but this year’s will be the virtual festival, Mango Madness at Home.

On Wednesday, July 8, at 4 p.m. ET, James Beard Award winner and serious mango enthusiast Chef Allen Susser, who also oversees Jade Mountain’s culinary programming, will host the 2020 Mango Madness Festival along with native Saint Lucian and fellow Beard Award winner Chef Nina Compton (you might also know her from Top Chef) and the resort’s Executive Sous Chef Elijah Jules. This year’s unique event will be live-streamed on Jade Mountain’s Facebook page, as well as the resort’s YouTube channel.

“Growing up in St. Lucia, mangoes were always the indication of blissful summer days,” Compton recently explained. “Mango is a staple in so many local dishes on the island. When Chef Allen asked me to participate in Jade Mountain’s mango festival, I was excited to go back to my roots and come up with recipes that honor my heritage and culture. There are lots of beautiful, unexpected mango recipes that can be easily made at home.”

Together, these chefs will introduce viewers to a variety of simple food and drink recipes that all showcase Saint Lucia’s favorite summer fruit. There will also be a Q and A session with the trio of chefs, during which guests can attempt to start a mango feud between the chefs by asking their favorites. Tropical hilarity could ensue.

Marigot Bay Resort & Marina’s Blackened Shrimp with Watermelon, Feta, Arugula Leaves and a Lime & Chili Pepper Dressing

(Serves four)

Ingredients:

For the dressing:

  • 0.25 cup (65ml) extra virgin olive oil
  • 3 tbsp (45ml) fresh lime juice
  • 1 tbsp (15ml) finely grated fresh ginger
  • 1.5 tsp (7.5ml) garlic, finely chopped
  • 0.5 tsp (.5ml) scotch bonnet pepper, finely chopped
  • 2 tsp sugar
  • Salt and pepper to taste

For the watermelon salad:

  • 3 cups arugula leaves
  • 1 cup parsley leaves
  • 1 cup torn mint leaves
  • 2 lb. piece seedless watermelon, cut into 1-inch cubes
  • 20 kalamata olives, pitted and halved
  • 1 small red onion, thinly sliced and soaked in ice water for 30 minutes
  • 4 oz. feta cheese, crumbled
  • 2 tbsp (30ml) extra virgin olive oil
  • 2 limes, halved
  • Salt and pepper to taste

For the shrimp:

  • 4 tbsp (60gm) blackened spice
  • 1.5 lbs shrimp uncooked, peeled
  • 1 tbsp (15ml) olive oil

How to Make It:

First make the dressing. Combine all dressing ingredients and stir well. Taste and add more chili, salt or pepper for a little more flavor, if necessary.

Next, the salad. In a large bowl, toss together the arugula, parsley and mint. Divide greens between 4 serving bowl or plates. In another bowl, toss watermelon, olives and onion. Spoon the watermelon mixture, with its juice, evenly over the greens. Sprinkle each salad with some feta and drizzled with olive oil.

Now, the shrimp. Mix the shrimp with the blackened spices and heat the olive oil. Arrange the shrimp in a single layer and cook for 2 minutes. Flip and cook for another 2 minutes.

Add dressing to each salad plates and place the shrimp on each salad.
