If you were only allowed to peruse the bookshelves inside the main gathering room of the clubhouse at Copal Tree Lodge, you might have difficulty ascertaining the lodge’s primary purpose. On those shelves, titles such as Lords of the Fly and The Fisherman’s Guide to Life share space with The Fat Duck Cookbook and The Art of Simple Food. Wedged in between, you’ll find books on mixology—Speakeasy and The Bar Book, specifically—while a current volume of Gray’s Sporting Journal abuts two issues of Condé Nast Traveler.

Is the southern Belizean property a fishing camp? A gourmand’s retreat? A luxuriously appointed eco-lodge? While the library suggests it could be any of those things, Copal Tree Lodge is, in fact, all of them. What once began as an understated fishing lodge—a property that attracted adventurous and enthusiastic sport fishermen (and still does, albeit to a lesser extent given the lodge’s evolution in recent years)—Copal Tree Lodge is a boutique resort perched on top of a bluff and nestled into the heart of a 16,000-acre estate that today includes an organic farm and a sustainable rum distillery.

The resort offers guests easy access to a lineup of seafood shanties and bars set only a few hundred yards from the Caribbean Sea in the town of Punta Gorda, less than 20 minutes to the south. And while a visit into town offers a glimpse into the local culture, which has its merits, guests likely won’t feel compelled to venture away from the estate for long—nor should they. From its dock positioned along the Rio Grande River, the lodge runs snorkeling, river fishing, and sunset cruises; while serious fishermen who are yearning to cast flies for bonefish, tarpon, and permit can set sail from the nearby marina in town.

“Fly fishing is a serious sport,” says Waluco Maheia, the lodge’s assistant manager. “River fishing can be more relaxed.”

Of course, notable guest experiences don’t require ventures out onto the water. Those looking for a day (or multiple days) of leisure, will be drawn to the lodge’s Jungle Spa, while Copal Tree’s small, teardrop-shaped pool provides an ideal oasis for quiet dips and peaceful lounging. Guests can also venture down the hill for guided tours of the organic farm, or they can participate in a bean-to-bar chocolate class. And for those who take immense pleasure in flavorful sips and bites, the lodge offers a farm-to-table, all-inclusive package ($150 add-on per night for each adult guest), which covers meals featuring ingredients grown on the 3,000-acre farm, as well as stirred and shaken cocktails highlighting a trio of estate-produced rums.

Annual production at the Copalli Rum distillery currently sits around 42,000 cases, and plenty of that rum makes its way up the hill to the lodge, which means guests will never ask the question that Johnny Depp famous quipped in the first Pirates of the Caribbean film: “Why is the rum gone?” Guests are also encouraged to schedule distillery tours, not to mention mixology classes and guided tastings.

During the latter, Maheia—who also serves as Copalli’s brand champion—prefers to learn from guests which flavors and aromas they identify. He doesn’t like to dictate what they’re likely to smell or taste. “We like to make this part of the tasting very interactive,” he explains. “And, of course, we’re going to name the dominant [flavor] profiles within the spirit, and I’d like to know what you all think is in there. What kind of flavors do you get?”

The white rum elicits responses that include prominent citrus notes alongside hints of banana and lychee. “So, what we’re getting is some tropical fruits,” Maheia acknowledges. “We’re definitely getting pineapple and banana and citrus; we’re getting hints of vanilla; and then you get some grassy notes in there, a bit of vegetation, something that compares to lemongrass.”

The barrel-rested expression, by contrast, introduces aromas of leather, burnt orange peel, and cola, which transition to baking spice flavors and tobacco on the palate. And Copalli’s Cacao rum delivers the roasted (almost bittersweet) aromas that are commonly associated with dark chocolate. When sipped, the rum offers up equally rich cocoa flavors with a pleasingly long, creamy finish.

All three spirits are the handiwork of Ed Tiedge, Copalli’s first master distiller, who learned the distillation trade at a family-owned cognac house in eastern France several decades ago. The rums also serve as an homage to the hundreds of acres of organically cultivated sugar cane that grows almost in the distillery’s shadow (as well as at off-site locations nearby).

“Our role as the rum makers is to transition those flavors from the field to the bottle, to not mess up what the farm has created,” Tiedge says. “That’s really the secret—exceptional sugar can juice. You have to start off with a high-quality product in the field, and if we’re good stewards of that juice at the distillery, you’re going to get a pretty good-tasting rum at the end.”

That good-tasting rum is proudly on display as the foundational spirit for 15 cocktails served at the rum bar inside Copal Tree Lodge’s clubhouse. Some are shaken with allspice or sage leaves; others include freshly squeezed pineapple juice or hand-cut chunks of watermelon; and some are sweetened with a variety of infused syrups, including fresh ginger and vanilla. All, however, provide a distinctive taste of the estate, which is yet another example of the property’s success.

Ultimately, Copal Tree Lodge accomplishes the most important objective of any luxury resort, especially one set in such an exotic locale. It delivers a dynamic and authentic sense of place—one that, in an unusual twist, can also be poured directly into your glass.

The first-ever nonstop service between Belize’s Phillip S.W. Goldson Airport and New York’s John F. Kennedy International Airport has begun on JetBlue Airlines.

JetBlue will fly year-round roundtrip flights three times a week, on Mondays, Wednesdays, and Saturdays, making New York the 11th U.S. city to do so. The first flight is slated for December 6, 2023.

Scuba divers, fly fishermen, hikers, birders, and all other manner of outdoor enthusiasts flock to Belize for its wild spaces, from the rainforests and waterfalls of the interior to the cream-colored beaches and bright coral reefs of the coast. Unless you’re solely set on one specific location, it’s worth considering dividing your time between two or more spots to make the most of this adventure-packed destination.

In a place where there’s so much to do, it’s hard to start planning an itinerary, but here are some of our favorite activities to get the ball rolling.

Scuba Diving

Second only to Australia’s Great Barrier Reef, Belize’s living coral system is the largest in the world, drawing in 130,000 tourists every year to swim alongside its eagle rays, green sea turtles, and occasional West Indian manatee. Companies like Amigos del Mar offer day trips that take certified divers to outlying atolls, such as Turneffe or Lighthouse, to drop in on walls swarmed by horse-eye jacks, and cruise over patch reefs where endemic species such as the whitespotted toadfish nestle under rocks.

Serious divers can also make it the focus of their entire vacation by staying somewhere like Blue Marlin Beach Resort, which offers a variety of thrilling experiences, as well as an equally alluring “relaxation” package.

Swim with Whale Sharks 

Belize’s Gladden Spit Marine Reserve, 30 miles from the town of Placencia, is one of just a handful of destinations worldwide where you can reliably snorkel with whale sharks—the biggest fish on the planet at up to 40 feet. The first full moon of March kicks off a bloom of Cubera snapper spawn, which the whale sharks come to feed on till mid June. 

Unique to Belize is the fact that travelers here can also scuba dive with this animal, which is not allowed most other places that this filter-feeder gathers. SeaHorse Dive Shop runs day tours that include gear and lunch.

Cave Tubing

It’s like a water park lazy river, but instead of looping it’s a one-way ride through light-dappled rainforest. Some tours include stops for rock scrambling and jumping off big boulders, as well as the chance to explore inside caves. A handful of concessioners, the popular Butts Up among them, offer this activity, each with their own twist. Regardless of which company you book, be sure to bring a drybag for your phone if you plan on documenting the adventure. 

Deep Sea Fishing

The same 200 miles of coral that is the Belize Barrier Reef also anchors a rich marine landscape that supports flyfishing, reef fishing, and deep-sea fishing. Thanks to the grassy flats off Turneffe Atoll and Ambergris Caye, fly fishermen can reel in bonefish and tarpon, among many others. 

Just inside the reef system, anglers can stay busy with snapper, barracuda, grouper, and jacks. Those looking to go deep-sea fishing can wrestle sailfish, tuna, and blue marlin on the line. Wahoo, dorado, and king mackerel are also in the mix. 

Go Fish Belize turns the experience into the ultimate day trip, combining Barrier Reef fishing with free diving for lobster and an afternoon snorkeling session. In between, a delicious BBQ lunch on a beautiful beach.

Ziplining

We love how ziplining in Belize mixes the thrills and adrenaline of speeding through the air with the calming scenery of rainforests. The interior has several companies and courses to choose from; our favorite is offered through Bocawina Rainforest Resort and Adventures near the town of Dangriga, a two-hour drive south of Belize City. The 9-run course spans 2.5 miles, with the longest flight stretching 2,300 feet.

Golf

Belize is not known for golf, but it’s also not without a handful of courses. Caye Chapel Golf Resort and Marina, a Four Seasons private-island property, is home to the 18-hole White Shark Golf Course designed by Greg Norman. The course has limited availability to the public, with a green fee of $200. 

A second, more affordable option is the 18-hole Roaring River Golf Course just outside the city of Belmopan.

Yoga

This largely undeveloped landscape appeals to all manner of spiritual seekers—many of whom have launched yoga studios and resorts. On Ambergris Caye, six miles from the town of San Pedro, Ak’bol Yoga Retreat and Eco-Resort offers drop-in yoga sessions. Stay an hour for a watermelon juice and whatever vegan fare the kitchen has whipped up that day—or stay a week and work on simply getting yourself centered. 

Snorkeling

You don’t have to be scuba certified to appreciate the beauty of the reefs—just don a snorkel mask and fins to gain access to a handful of shallow sites, such as Shark Ray Alley, Hol Chan Cut, Tres Cocos, and Mexico Rocks, where you’ll likely encounter nurse sharks, stingrays, butterfly fish, and a whole host of colorful, tropical fish. 

For those who can handle a two-hour boat ride, the trek to offshore atolls, including Glover’s Reef, is well worth it for endless exploration of shallow, easy-access reefs.

Explore Mayan Ruins

A trip to Belize isn’t complete without touring Mayan ruins. Unlike the archeological sites in Mexico, those in Belize don’t receive massive crowds—each one is a quieter experience, allowing you to more easily imagine what life was like centuries ago. 

Caracol, abandoned by the Mayans around 900 A.D., covers 25,000 acres and includes the 143-foot Sky Palace and a handful of other temples. The site is impressive by itself, but a visit is more memorable if you shell out for a tour, like a Pacz Tours day trip, that can fill in the colorful history—including the fact that warriors played soccer with the heads of their slain opponents. 

Beyond Caracol, there are seven more sites to consider: Lamanai, Altun Ha, Xunantunich, Cahal Pech, El Pilar, Lubaantun, Cerros, and Uxmal.

Food Tour

Wander the streets of Belize City or any town and you’ll get to try local treats like the arepa—a maize dough snack typically stuffed with a cheese filling. However, if you want to experience a full smorgasbord of Central American flavor while staying on Ambergris Caye, book a lunch or dinner outing with Belize Food Tours

Have you ever wanted an entire island all to yourself? (Yes, please.)

It’s the reason why private-island resorts are so appealing, but then you run into other guests throughout your stay. One place you can always have to yourself—literally—is Gladden Private Island, an ultra-exclusive resort accommodating a maximum of four guests. And you certainly won’t be roughing it: the island has all the bells and whistles of a luxury resort, including a dedicated staff.

The project was spearheaded by Chris Krolow, CEO of Private Islands Inc. and executive producer and host of HGTV’s Island Hunters, and his business partner David Keener, CEO of Vision Properties. We caught up with Krolow to ask what makes Gladden stand out above the rest.

Q. What made you decide to open a private-island resort?
A: I’ve been selling islands for 20 years as my main job and I’ve been all over the world hosting Island Hunters on HGTV, so I’ve been very immersed in the business for a long time. I own a few private islands around the world but none were the right fit for the concept I had in mind. With Gladden, the stars aligned. I found the perfect islands to build on, and David [Keener], who I worked with on another island project that was very successful, was able to secure all the permits we needed quickly and handle the construction side.

Q: How did you choose these two islands for the resort?
A: When I saw these islands 20 miles northeast of Placencia right on the reef, I knew they were perfect. They had been on the market for a while and no one wanted them because they were so remote. They’re also too small for someone to build a large resort. But for this concept, they’re just right.

Q: What makes Gladden Private Island unique?
A: Gladden is the culmination of all the good things I’ve seen, and solves all the problems I’ve seen. Ultra-private islands are awesome: the location is amazing, but they’re hard to rent out because they don’t have any level of service.

On the flipside, you’ve got all these amazing private-island resorts with impeccable service. Some of them have villas and are very exclusive, but it’s almost the anti-private island. Even if it’s a small resort and you’re only there with a few other couples, what if you don’t want to see those couples?

With Gladden, I had the solution: we built a single modern-Mayan-style villa for just one or two couples on the main island and housing for staff on the smaller island. The chef, manager, and concierge are a two-minute boat ride away when signaled and completely out of view the rest of the time. We even installed a “privacy meter” to indicate if you are alone or if a member of staff is visiting the island for any reason. All support structures on the smaller island are hidden from sightlines of the main house, and there are no neighbors to be seen in any direction.

Q: What’s included in the room rate?
A: At resorts, there’s always an upcharge, but we do out very best to make sure everything is included. And because we only accommodate one or two couples, our onsite concierge will reach out ahead of time to find out their preferences. We plan meals and ship in whatever we have to. We discuss privacy level: do you want the staff to be as minimal as possible or do you want someone serving daiquiris by the pool?

We also schedule any activities. If you want to go out for dinner at Hatchet Caye or one of the neighboring islands, we will arrange it. Diving is included, and our managers are PADI-certified instructors. We have a full-time massage therapist on staff, so you can have as many massages as you want.

Q: How do you get there?
A: One of the best parts about Gladden is that it compares to Tahiti, the Seychelles, and the Maldives—but it takes half the time to get there from the U.S. and Canada. From Miami, it’s just a two-hour flight to Belize City. I leave Toronto at 9:30 a.m. and I’m on the island by lunch—and no jet lag!

Once guests arrive in Belize City, our concierge takes them from customs to the resort’s helicopter, and then it’s a 35-minute flight to Gladden. Plus, the ride flies over the Barrier Reef, one of the most amazing experiences you could imagine. And then you land on your own island with the staff is waiting with a welcome drink and a snack. After you’ve had some time to absorb everything, they come back, give you a tour and show you how things work.

And you’re not just tucked into some destination where you’re in the middle of nowhere. The snorkeling around Gladden is amazing. Boats don’t really go out as far as the island, and the fish don’t really know what people are, so they’re not scared and will come right to you. Other parts of Belize don’t offer that kind of experience. Plus the island is a five-minute boat ride from the Gladden Spit, where the whale sharks congregate, and 45 minutes from Placencia.

Q: What will guests love most about staying on Gladden?
A: When the staff leaves the island, you’ll feel like the only people on the planet. Usually when you have that feeling, you’re camping somewhere really remote—there’s no air conditioning, Wi-Fi (that really works), or flat-screen Apple TVs.

At the end of every evening, you’re on your own. It’s such a feeling, when you see the staff light go off, the sun is going down, you’ve just had a meal prepared for you, martinis are waiting—you’re just being completely pampered. It’s pretty incredible.

This year’s Placencia End of the World Marathon will be held on December 4, and for those participating in the 26.2-mile race, Sirenian Bay Resort & Villas is offering an exclusive deal. The luxury resort’s “End of the World” Marathon package includes five nights for two guests in a one-bedroom beach bungalow. The all-inclusive package comes with unlimited food and drinks, including a pre-race dinner full of carbs and a private, celebratory post-race dinner with delicious Belizean dishes. 

But this deal offers more than just food. It also includes local flights from Belize’s Philip S.W. Goodson International Airport to Placencia, along with ground transportation to the resort. And once you’re done running for hours, you’re going to want to relax and recuperate. Enjoy a post-race recovery spa session at Siren’s Spa as part of the package. Here, a variety of massages are offered, including Swedish, hot stone, and deep tissue, and there are plenty of other options for some post-marathon pampering, like facials, aromatherapy, manicures, and pedicures.

Right on the edge of the Belize Barrier Reef, you’ll soon find Four Seasons Resort & Private Residences Caye Chapel. The private island community is slated to open in 2024, offering visitors and residents the five-star service that comes standard with the Four Seasons. And since it’s located beside the largest reef of its kind in the Western Hemisphere, the brand and Caye Chapel have made sure to focus on the precious ecosystem that surrounds it.

Fabien Cousteau—grandson of world-famous oceanographer Jacques Cousteau—will lead the Fabien Cousteau Nature and Conservation Center in partnership with the island. Along with his team of scientists, Cousteau plans to use 3D printing technology to strengthen surrounding reef systems damaged by humans. Caye Chapel will offer even more family-friendly activities at The Fort, an education and adventure center for kids. The Fort will also offer off-island wildlife expeditions, organic gardening classes, along with a stargazing observatory.

Kids can’t have all the fun. Caribbean cruises offer access to some of the best spots for sunning and swimming—on an array of legendary and lesser-known islands—but passengers can also enjoy relaxation and adventure on a half-dozen private islands owned by the major cruise lines. In fact, the only way to visit these small, beach-fringed oases in the Bahamas and Belize is to book a cruise that calls on one of them. 

All are ideal for a laidback day at the beach, while a few offer waterslides, zip lines, and other thrills that kids, teens, and young-at-heart adults love. Here’s how to enjoy six cruise line private islands—operated by Royal Caribbean, Norwegian, Disney, Holland America, Carnival, and MSC—on your next Caribbean cruise.

Perfect Day at CocoCay, Bahamas

Royal Caribbean’s action-packed private island in the Bahamas opened in 2019—and it’s immediately obvious that there’s way more than a beach day on tap for disembarking passengers. Designed with vibrant colors and a theme-park ambience, Perfect Day at CocoCay is a place to enjoy adrenaline-rush thrills or chill out in a luxury overwater cabana. Taking center stage is the tallest waterslide in North America, and nearby is the largest freshwater pool in the Caribbean with a hugely popular swim-up bar. 

The island features five distinct areas (a sixth, adults-only Hideaway Beach, is slated to open in late 2022). Kids and teens will want to make a beeline for Thrill Waterpark (there’s an admission charge and kids under 14 must be accompanied by a ticketed passenger older than 14), which features twisting waterslides looping from the top of 135-foot Daredevil’s Peak. Also part of the waterpark is Splash Summit, featuring six multi-person waterslides with names like The Twister, Slingshot, and Splash Speedway, plus an Adventure Pool with an obstacle course and the Caribbean’s largest wave pool, which washes up on an umbrella-and-chaise-lined beach. 

Splashaway Bay, a splash zone with sprinklers and bucket drops, and Captain Jill’s Galleon, a shipwreck with slides, are great options for younger kids—and both are free. Pool-lovers can head for Oasis Lagoon, a family-friendly free-form pool with a swim-up bar, while those who prefer a saltwater dip can reserve a daybed or cabana on the beach at Chill Island, where snorkel gear and guided Jet Ski tours are available. Watersports are also available on South Beach and the ultimate indulgence—overwater cabanas—can be rented at the upscale Coco Beach Club. 

At an extra cost, there’s a 1,600-foot zipline and an Up, Up, and Away Helium Balloon Ride that rises 450 feet and offers a stunning view of the island, ship and vivid blue sea. Perfect Day at CocoCay offers three complimentary places to eat—Snack Shack, Chill Grill and Skipper’s Grill—and four bars (where onboard drinks packages are valid). Those who prefer to just plop down on a complimentary beach chaise on Chill Island or South Beach can do so without paying an extra penny.

Castaway Cay, Bahamas

Disney Cruise Line’s private island delivers that clean, safe, and familiar “happiest place on Earth” vibe with a tropical-beach-day twist. Castaway Cay isn’t a theme park—there’s just one 2,400-sq. ft. floating water play area, Pelican Plunge, featuring two waterslides—but familiar Disney characters do make appearances. The main focus here is on beach time, especially at Castaway Family Beach, which features beach sports and games for kids in the Da Shade Game Pavilion, as well as snorkeling along the Explorer Trail in the aqua-hued Snorkeling Lagoon. 

Teens (aged 14-17) can escape to the Teen Hideout Lounge, while couples or singles age 18 and older can opt for adults-only Serenity Bay, where the Castaway Air Bar serves up frozen cocktails and guests can reserve a cabana massage (both at extra cost). Kayaks, paddle boats, stand-up paddle boards, and aqua trikes are available for rental and there are several open-air barbecue dining spots serving complimentary meals. And, of course, there’s shopping for Disney souvenirs with the Castaway Cay logo.

Ocean Cay Marine Reserve, Bahamas

MSC’s new Ocean Cay Marine Reserve is all about the beach—it features two miles of white sand spread over eight beaches (each with its own bar), a fun assortment of complimentary dining options (including food trucks, though the ones serving fresh seafood snacks require an added charge), an on-island spa, a wedding pavilion, and a handful of cute souvenir shops. Just don’t expect a pool. 

MSC spent several years converting this former 95-acre industrial island (it was a sand extraction site) located about 20 miles from Bimini into a place dedicated to both fun-in-the-sun and marine conservation and education. The cruise line planted more than 75,000 trees and shrubs and relocated 400 coral colonies so they can grow and repopulate and attract thriving sea life (including sea turtles) and marine bird species. Floats, kayaks, stand-up paddle boards, and snorkel gear are available for rent and guests can book snorkel, kayak, and dive excursions or climb to the top of the island’s lighthouse for 360-degree views. 

There are also cabanas for rent for up to six guests and those in the ship’s exclusive MSC Yacht Club staterooms and suites have their own private beach at Ocean House with cabanas and upscale dining. Many MSC ships don’t depart until after sunset when Ocean Cay glows with a festive Junkanoo Parade and a dazzling LED lighthouse show that guests can enjoy from beach chairs (some beanbag style), a beach bar, or the ship’s balconies.

Great Stirrup Cay, Bahamas

Norwegian Cruise Line’s Bahamian Island is 270-acre Great Stirrup Cay and NCL has owned it since 1977. It’s a beach destination for sun lovers on Norwegian, Oceania, and Regent Seven Seas Cruises who can lounge on its 1,500 feet of white-sand beaches, rent private cabanas, or try a variety of watersports (snorkeling, stand-up paddle boarding, kayaking) or book shore excursions, including Wave Runner tours, parasailing adventures, stingray encounters and swimming with the famous pigs of Treasure Island (all at an extra cost). 

There are three restaurants (but only Abaco Taco is complimentary) and four bars (among them a Bacardi Bar and a Patron Bar) as well as two triangle-run ziplines, including the Long Run, which begins with a daring 1,400-foot swoop over the water. Silver Cove, an exclusive retreat area, was added to Great Stirrup Cay in 2019 and features an oceanfront lagoon area with private beach access, beachfront villas, a Mandara Spa, a Moët & Chandon Bar, and the Silver Cove Restaurant and Bar. It’s accessible to any guest who rents a villa or reserves a spa treatment at the on-island Mandara Spa.

Harvest Caye, Belize

Norwegian developed Harvest Caye, its second private island, in 2016. Located off the coast of Placencia in southern Belize, the 75-acre resort-style island serves as a launch pad for both water and land excursions (snorkeling above the Belize Barrier Reef, wildlife-viewing, and visits to Mayan sites) and sister cruise lines Oceania and Regent also call here on select itineraries. All staff on the island are Belizean and the shops selling souvenirs and crafts are all locally owned. 

For beach-lovers, there’s seven acres of soft sand with complimentary loungers and umbrellas, along with a saltwater lagoon for watersports (equipment and activities are bookable at an added cost but are complimentary on Regent cruises). Unlike other cruise line private islands, however, there’s no complimentary dining on Harvest Caye. Everyone, even guests on all-inclusive Regent cruises, must pay for food and drinks at the eight on-island dining outlets, including at the swim-up bar located within the 15,000-sq. ft. free-form pool. For an additional charge, guests can also rent one of 15 private poolside cabanas or one of 11 butler-serviced private beachfront villas. 

The island is a nesting site for endangered Hawksbill turtles and there’s a small Wildlife Sanctuary housing local reptiles and birds and a butterfly garden where magnificent Blue Morpho butterflies flitter above visitor’s heads. But a highlight for many guests is flying high above the entire island Superman-style from the 136-foot-tall, lighthouse-style “Flighthouse,” which features 3,000 feet of zipline, a ropes course, and suspension bridges.

Half Moon Cay, Bahamas

Crescent-shaped Half Moon Cay is the largest cruise line private island at 2,400 acres, much of it designated as a nature preserve. It is shared by Carnival Cruise Line and Holland America Line and offers opportunities to actively appreciate the beauty of land and sea on horseback rides, nature walks, kayak paddles, and stingray encounters (at an added cost). 

Known for its two-mile long talc-white beach and tranquil blue lagoon, this Bahamian island doesn’t have adult waterslides or a pool (there is a gentle aquapark for younger kids), but it does offer clamshell daybeds, brightly colored cabanas, and private two-story villas for rent for the ultimate in relaxation. There are “first-come, first-sway” hammocks, too, and a lively bar shaped like a pirate ship. 

All guests can enjoy a complimentary buffet lunch at Tropics restaurant (just get there early to avoid missing out on the burgers and fish tacos, especially when two ships are in port). There’s also a Lobster Shack and several beach bar options that cost extra (a drinks package for the island is available), including the cleverly named I Wish I Could Stay Here Forever Bar.

Belize has been busy. In the last year, hotel builders have doubled-down, primarily on the island of Ambergris Caye—gateway to the world’s second-largest barrier reef. One property has already opened its doors to guests (and their dogs), and another four are coming, starting later this year and continuing through 2025. 

There’s also a newcomer to the sustainable glamping arena in the Cayo region, giving travelers another option for small-footprint travel. We’re excited about them all, and while we normally wouldn’t pick favorites, let’s just say that one of the most anticipated newcomers will be offering overwater villas.

The Best Western Grand Baymen Gardens Resort

On Ambergris Caye, this 54-suite resort has been refreshed and is now part of The Best Western collection. The Best Western Grand Baymen, less than a mile from the town of San Pedro, includes a pool, fitness club and tennis courts. The condominiums, a mix of studios, one-, two- and three-bedroom units, are available for nightly stays as well as long-term rentals up to six months. 

Units can also be purchases by those ready to buy into island living; prices range from $98,600 to $299,900. At the time of writing, four of the six buildings have already sold out. Also of note: The property allows guests to stay with their dogs.

Margaritaville Beach Villa Resort Belize

Set to open November 2022, the Margaritaville Resort Belize is readying to offer guests the full Ambergris Caye experience, from the tranquility of the beaches to the action of ocean watersports. The resort keeps the fun on tap with kayaks, paddle boards and sailboats plus pickle ball and bocce. The 55 villas offer a mix of one- to four-bedrooms, so you decide whether to travel solo, make it a romantic getaway or bring the whole gang of Parrotheads. 

Of course, it all comes with the Jimmy Buffett experience, from the legend’s music to his Landshark beer served at the open-air bars overlooking the water. While the property is still in the stages of completion, the resort is offering special “try before you buy” packages for $799 that include flights from Belize mainland, plus meals and accommodation. Should you choose to pull the trigger, that cost is subtracted from the buy-in.

Belize Marriott Residences

One to keep an eye on, this collection of beachfront condos on Ambergris Caye, just north of the town of San Pedro, is still in the building phase. The Belize Marriott Residences, 70 in total, will include studios, one-, two- and three-bedroom properties, all with colonial-style interiors. 

These will become vacation rentals once completed, but the bigger opportunity right now is the chance to own a piece of the island coast; buying in ranges from $319,900 to $899,900

Hills and Valley

This sustainable newcomer in the jungles of the Cayo region, near the town of San Ignacio, is crafting a get-back-to-nature experience with seven A-frame glamping cabins. A mix of sizes will accommodate couples or larger groups. 

Beyond the cabins, the resort offerings include lessons in permaculture, a sustainable design for environments, local fare at their onsite restaurant, plus offer vegan and vegetarian treats and staples sold at their market. As of time of writing, opening is slated for July 2022.

Four Seasons Resort and Residences Caye Chapel

This will be the brand’s first foray into the country, and its second Central American venture alongside the Four Seasons Costa Rica. The big plans for the 280-acre private-island experience include an airfield and heliport to receive guests following the 8-minute flight from the Belize mainland. 

Overall, Caye Chapel is slated to include 50 estate lots, 35 private residences and 100 guestrooms, as well as an 18-hole Greg Norman-designed golf course and an underwater-focused nature and conservation institute by explorer Fabien Cousteau. The property is planning to open late 2022.

Six Senses Belize

You had us at overwater villas. Though ubiquitous in the Maldives and the Islands of Tahiti, this style of accommodation has yet to spread throughout the Caribbean—until now. Six Senses is building a new property across two Belize locations: Ambergris Caye and a 10-acre private island, two miles offshore, that will offer 45 overwater villas along with a wellness village. Promised offerings include an anti-aging center, outdoor yoga and healing practices that incorporate local Mayan medicine.

On Ambergris Caye, Six Senses is building 24 residences, ranging in size from two- to seven-bedroom. In addition to the golden beach—hailed as Secret Beach—the property will include a scuba center and an organic garden to supply the resort’s restaurants. Both are set to open in 2025.
